que ce soit les surfaces, les matières premières ou le produit fini En effet, 46 % des souches étudiées appartiennent à l'espèce S. equorum et 35 % à l'espèce S. succinus. Les espèces S. xylosus et S. saprophyticus habituellement isolées dans les salaisons fermières sont ici retrouvées de façon minoritaire (respectivement 2 % et 7 %). L'espèce S. xylosus a été isolée à partir de la mêlée mais n'est plus présente dans le saucisson. L'espèce S. carnosus présente ici la particularité d'être isolée à partir de surfaces (couteau et mur séchoir) et non dans la matière première et dans le produit fini.
