Contribution au développement de l'analyse non séparative d'espaces de tête spectrométrie de masse

Abstract : The aim if this research was to contribute to the development of non separative analysis of headspaces by mass spectrometry. Firstly, optimisation of acquisition conditions of spectral fingerprints and pre-processing of the signal were studied. Then, new possibilities were developed : control of significant processes, typology of atmospheres and estimation of sensory characteristics. Lastly, to improve the setting up of perennial databases, the limitations related to the instability of the instrumentation were investigated. A new method of signal correction based on the introduction of an inert gas into the MS made it possible to correct the effect related to the modifications of acquisitions parameters. The obtained results demonstrated that NSA-MS offer powerful potentialities for analytical characterization provided that they would be integrated ina rigorous strategy of fingerprints acquisition and data treatment.
