              <p>Bacillus cereus is a human foodborne pathogen associated to diarrheal and emetic syndrome. The emetic syndrome is usually associated with the ingestion of food containing cereulide. The cereulide is a peptide toxin produced by the emetic strains causing nausea and vomiting. B. cereus AH187, the emetic reference strain, is covered by a two-dimensional paracrystalline protein network, called the S-layer. The two constitutive proteins of the S-layer are SL2 and EA1. Their proportion and their arrangement on the surface change during the growth. The S-layer participates in the surface properties of B. cereus and would promote adhesion to abiotic surfaces in B. cereus. Moreover, by synthesizing the S-layer, bacterium improves its starvation survival, and its resistance to stress in stationary phase. Therefore, the S-layer would indirectly contribute to the stress resistance of cells in stationary phase, by modulating the regulatory pathways.</p>

              <p>Bacillus cereus est un pathogène humain fréquemment associé aux Toxi-Infections Alimentaires Collectives (TIAC). Les TIAC à B. cereus sont caractérisées par des syndromes diarrhéiques et émétiques. Le syndrome émétique est généralement associé à l’ingestion d’aliments contenant de la céréulide, une toxine peptidique produite par les souches dites émétiques. B. cereus AH187 est la souche émétique de référence. Elle est recouverte par un réseau protéique paracristallin bidimensionnel, appelé couche S. Les deux protéines constitutives de la couche S sont les protéines SL2 et EA1. Leur proportion et leur disposition à la surface de la bactérie varient au cours de la croissance. La couche S participe aux propriétés de surface de B. cereus et pourrait favoriser l’adhésion des surfaces abiotiques chez B. cereus. De plus, en synthétisant la couche S, les bactéries améliorent leur survie à la famine, et leur résistance au stress en phase stationnaire. La couche S contribuerait donc indirectement à la résistance au stress des cellules en phase stationnaire, en modulant les voies de régulation.</p>
